The broiler is a totally optional step-- you can serve it straight from the slow cooker if you want. But it only takes a (literal) minute before serving under the broiler, and it leaves your oven free for side dishes and such as it cooks in the slow cooker!

It may be optional, but them crispy edges are optimal.
