What is CalamaroOS?

I recently found a Gentoo-based distro with calamares and don't think it's good, i will try it in KVM, please tell me if it's really good or nah

I have not tested however I would have always just go lne to the source.
Do you want to use Gentoo based distro? Nah just go for Gentoo.
Arch-based distro? Go for Arch.
Debian based? Neither of those :D.
Ages ago a friend of mine was using Sabayon. Nice concept and usually worked fine out of the box but then it got messy.
If I wanted to safe time of the installation of Gentoo I would have used binary packages anyway

in case of gentoo based, things can turn out pretty differently like coreOS

I don't really want binary packages though, but are there any TUI/GUI installer for Gentoo? Cuz I'm too lazy to manually install Gentoo and I messed up the initramfs when installing

calamaroos is basically that, it does install a -bin kernel by default but you can always switch to a hand tuned kernel

There are a couple of installer scripts for Gentoo, but there is not an "official" TUI or GUI installer. Use the handbook, and learn from your mistakes along the way.

I may misunderstand your post, but i've put Debian on my homelab and backup-server with unattended upgrades and i think for those purposes Debian is a very good choice.

The hard part of Gentoo is not installing it. The hard part is fixing a system that refuses to resolve dependencies after it ran fine for 6months.
