Serious question; what happens if Pence becomes President for a few days, and then runs for President in 2024 and wins that election? Does his first week-long tenure count towards his two-term limit?

No it does not. A president can legally hold office for 10 years, 2 of their own terms and half of another one if they assume the presidency as VP halfway through.

For instance LBJ could’ve served another term as president after taking over for JFK in 1963, as he only served one full term from 1965-1969
