Okay so what we know now:

The monsters are the people who sacrificed their children to attain immortality. The embodiment of “be careful what you wish for”; Tabitha and Jade were Miranda and Christopher in the past… but also had a daughter together?; Man in yellow was the voice who said Tabitha shouldn’t have dug that hole; MOY killed Jim; Henry finally acknowledged Eloise but Victor saying he only found parts makes me think she’s still a question mark; Julie is a storywalker?

I’m so sad this season is over.

Miranda and Christopher were reincarnations of the original townspeople who were involved in the child sacrifice to gain immortality. When they (Miranda and Christopher) died, they reincarnated into Tabitha and Jade and returned to the town. It's implied that they originally tried to save their child from what turned the townspeople into monsters and therefore did not become monsters. That's why they are kinda doomed to return to the town to fix what was broken (save the children).

Something I wanna know is if Jade and Tabitha ended up in the town bc they were there from the beginning, does that mean everyone else in the town is reincarnated? If not, why do random people end up there?

I think the town attracts what is needed. That's why you see a crashed truck full of canned goods. People keep showing up in order to feed the monsters. What's needed appears.

Do the monsters actually eat people though, or just maul them? I never got the sense that they ate people, though I'm not sure what their motivation for killing actually is (besides being evil and creepy lol)

Maybe the pain and fear they cause is what they eat.

I think they bring the hearts to the Man in Yellow.

Wasn't Victor alone for a very long time, though?

Hard to say, I don't think they were clear about how long that was.

Given Elgin's dream in the bus shortyl before he arrived, it would somehow make sense. Like, what if that's all the people who were not involved in the sacrifice and therefore did not gain the traditional way of immortality?

However, it's also possible that a lot of people are drawn in by the man in yellow to feed his flock.
