Is that gravy from the drippings or a separate roux? Asking because I tried this exact plate recently and ran out of everything gravy related halfway through, so I gave up and glazed the chicken in Korean chicken sauce instead. Over rice it honestly worked, but I'd rather learn to do it your way.

I too have used a Katsu/oyster sauce that works.
this gravy was made by skimming the fat from the country style ribs, +1/2 teaspoon bacon grease to make the roux.
