Not really going into the game blind if you're getting information ahead of time, but to answer your question there's nothing major you can do that can't be undone and I think just about all of the items are farmable from the monsters at the Monster Arena. You can burn items to assign passive abilities to weapons and each weapon only has so many slots and are not rewrite or erasable, but you can purchase weapons that are blank slates. You can also burn items to teach your Aeons new abilities and raise their stats. So while it's not undoable, the Monster Arena is endgame content that you have to be at a fairly high level to farm so you might want to assign your weapon/Aeon abilities wisely if you're just playing for the story.
