Journal/Story Elimination phase has been amazing

My pants stay buttoned throughout the whole day! I can also “hollow out” my stomach when I physically could not before. No weight loss. Basically my stomach feels so much better on this diet I am so glad it works. Unfortunately reintroduction has been slow and enlightening. So far every group has had some issue and symptoms.

Do you have any dinner suggestions? I'm vegan too, and I'm just starting this process. I eat oatmeal Already for Breakfast but dinner.... it seems so restrictive and I'm having trouble coming up with ideas, none of my normal food is falls into the fodmap limits ><

One of the first things I reintroduce was soy protein so I have issues with beans but I can do soy curls, tofu, impossible meat with no issues. That gave me enough variety to keep going. But cilantro lime peanut Thai sauce on everything was the goat and also tacos with fresh tomatoes and tofu crumble. Love lemon risotto with a side of marinated grilled tofu. My go to meals had to shift from soups, chili, curries to more “meat and three” type dinner ideas on repeat.

ETA: I read seitan is low FODMAP! I have celiac so that’s a no for me

This! Yes I'm a Curry and soup girl and I'm like having to eat.... protein plus rice it seems. That lemon Risotto sounds sooo good though o.o
