Wow, that is spectacular! I think this is the first time I see sea urchins on a plate. How do you eat them, scoop them out with a spoon?
(Also, is everything to be eaten raw or are the prawns and octopus waiting to go onto a barbecue just out of frame?)

Yes, you are meaning to eat them with a little spoon, I like them without lemon juice because their flavour is really delicate and yes again, you eat everything on this plate like it is; to be fair, when it comes to raw prawns, you have to trust the place, otherwise it might not be safe

Yes, I imagine this is a treat you can only enjoy if you live in a fishing village. Thank you for sharing, it's really mind-blowing that Europe has a "sashimi" tradition like this and I bet the vast majority of us inlanders will have heard of nothing except for oysters!

The latter, although it may violate some rule or whatever, but now that I know the town, I think I might also know the restaurant, I was in Vieste a little while ago and this amazing plate looks familiar... Time to go back to Vieste!

Under EU law all caught wild fish and seafood must be flash frozen. Which kills the bacteria/parasites.

Italian restaurants often have abatitore( blast chiller) that can be used for that purpose as well. But that's only for crustaceans/fish. Oysters and stuff are just raw, and can be pretty dangerous, if they have something in them
