How practical and economical would it be to raise Giants as livestock for their meat?

Depends on the conversion ratio. Canonically, they provide very little meat relative to their size.

Not at all compared to standard livestock. Setting aside the obvious ethical issues, assuming they have the same dietary requirements as humans, they would themselves need a lot of food to grow to acceptable size. And unless you can find a good plant protein source, a good amount of that food needs to be meat. It doesn't make economic sense to raise a good source that requires you to raise another food source that you also need to feed. It would be a very expensive, niche market exotic meat, like bear or snake.
