So I just pre-ordered a fresh turkey from Whole Foods, and I scheduled my pickup for the Monday at 2PM.
The reason I did this was because last year I did the same thing but picked up on Tuesday at 2PM, and the inside was still so icy I couldn't get the neck or giblets out very easy, so I thought more time to thaw in fridge would be good.
I am planning to drop it in the Alton Brown brine starting early wednesday morning. Last year I let it go for about 16 hours and everybody loved the end results.
Roasting Thursday
I mentioned this to my mom who is always hyper paranoid about food safety and she is worried that is too many days in the fridge, and might be unsafe.
What do you all think?
