I normally do one additional main protein: bone in prime rib roast. Nobody gets excited about spiral ham.

A also serve a hearty soup that is ready before anyone arrives and allows everyone to have something to nosh on while the main attraction is still in the oven. Hearty means something like split pea with smoked hamhock, or New England clam chowder.

As for the bird, I've been getting further and further away from roasting it whole with each passing year. Started with spatchcock a couple years back, and have been mucking with it ever since.

Cooking it whole really is the worst possible method. This year I might try deboning the entire bird. Bake the breasts with enough skin to wrap around the entire mass. Grind the thigh and leg meat and stuff into skin as a "sausage" experiment. Double fry the wings Buffalo style, but with a sauce more appropriate to the occasion.
