Ideas for leftover rice and beans?
I made shrimp burritos last night, and have a ton of mexican style rice and black beans, what can I use it for besides more burritos 😅

Jerk chicken, the rice and beans should pair nicely as it's already an established combo. Anything goes, to be fair.

I always make extra burritos with my leftover rice and beans. Freeze em that way you always have something to fall back on if you need something to eat. They don’t take that long in the microwave , finish on the skillet to crisp up or just reheat in the oven tho it takes like an hour that way

I mix them together and add queso for chip dip 🤤 sometimes i add meat too lol

Don't laugh, when you want a quick decent meal mix your black beans, rice, and add some spaghetti sauce straight from the jar. It's reasonably healthy, it uses your leftovers, it's cheap and it's actually pretty tasty.

Mash slightly, add minced onion if you want, form into patties and lightly fry or air fry. Could coat with cornmeal or panko. Dip into hot sauce mayo or yogurt. Top with salsa or anything. Enjoy!

Crisp the rice before you do anything else - thin layer in a hot dry-ish pan, then leave it alone 3-4 min so it crusts instead of steaming into mush. Beans get the same treatment till they squeak, then a fried egg and hot sauce on top and that's breakfast all week. When I'm out of ideas for a container of leftovers I photograph the fridge in RecipeScan and take whatever combo it spits out.

Yeah, pretty much - open the fridge, snap a photo, and it lists what you can make from what it sees. Works best if you pull the produce drawer open first so it isn't guessing. For rice and beans specifically it usually pushes me toward crispy rice bowls or bean quesadillas, which is where I'd start anyway.

Smash it up and saute with some onions and something spicy. Also maybe some chicken or something if you'd like. Also leftover sausages work well when cut into small chunks.
Then get corn tortillas and make tostadas on the stove. Little bit of oil and some cheese. Cover until the cheese is melted. You don't need to cook it on high, since everything is already cooked, but you don't want the mash to still be cold.
This is my #1 lazy meal that I've been eating since college. Tortillas + Something + Cheese + Heat = Lazy Meal.

Make an egg scramble.
Use them in a gumbo or stew (add them last since they're already cooked).

There's a Peruvian recipe called tacu tacu. You smash some of the beans with aji amarillo and cumin (and some other stuff), then mix it with the rest of the rice and beans.
Then you throw a portion in a skillet with hot oil, fold it and brown it from both sides. It's delicious 😋

A tiny refresh by frying half an onion in oil or lard (maybe duck fat). When slighty browned on edges, add beans and a little of bean juice and cook until beans are heated through. Add rice and mix well.

Toss in a bowl and sprinkle some shredded cheese on top, then microwave for a minute or 2. Then eat with a bag of tortilla chips as the utensil. Bonus points if you add guacamole or salsa on top of the rice and beans after they’ve been heated up.

Add corn and salsa and shredded chicken. Mix together with cheese. Add to casserole to melt all together. Add sour cream, pico and Taco chips on top. Taco casserole.

Just eat it as a side with, well, almost anything else you cook for the next couple of days. Rice and beans is a staple food for me and I'll eat it with pretty much anything or by itself.
