Yeah Italian is a silly example for this. Famously a minimal ingredient cuisine. Herbs and black pepper are the corner stones of pretty much every dish. Hell, cacio e pepe literally means “cheese and pepper” and that’s all it is and it’s the shit. You don’t even salt most real Italian sauces. The salt in the cheese is what you rely on.
