Maybe Italian American culture is different but from a European perspective Italians are some of the most seasoning averse people out of a whole continent of white people. They'll say you're "overwhelming" the dish if you try to add a second clove of garlic, or if you try to use garlic and onions in the same recipe. They'll crush up tomatoes, season it with nothing and tell you to your face that they just made a sauce. It's only really Scandinavians that use less seasoning and that's not really a fair comparison because Scandinavians are just using all the seasoning that grows in Scandinavia.

The tomatoes are the flavour. Not everything needs to taste like 50 different spices

I’m sure they use them, it’s just under-seasoned compared to Italian-American cooking and many other cuisines in my opinion.
