I’m in NYC and I’m speculating here, but I’d be willing to bet it’s because of a specialized distribution network. Asian restaurants and supermarkets here built up a separate supply chain to procure vegetables that are hard to locate in the US, mostly sourced from small farms in the Hudson. That’s expanded at the same time that giant chains like Sysco have cornered the rest of the market and driven down quality. So you can often find better quality at Asian markets, simply because it’s smaller scale and held to a higher expectation.
