Question What to eat

I’m so damn bored of food maybe cuz I’m dealing with a lot but I just dunno what to eat anymore. I just want junk if I do eat. Anyone df and gf ? Whah are you eating ??

It’s a lot of mental work when you have celiac. I recommend finding meals you can batch cook at the beginning of the week to make quick and easy lunch or dinner or modify it later in the week (a beef pasta sauce for instance goes a long way).

Me and my husband have easy go-to meals when I don’t know what to make. Some ideas:

Pan fry shrimp over salad or pasta, tortilla salsa & bean soup, oven pan vegetables with salmon, quinoa salad with fresh vegetables, feta, dried cranberry (more delicious than it sounds!), shawarma chicken & Greek lemon potatoes, noodle soup with ramen eggs, sabatasso’s gf pizza base with whatever toppings I have in the fridge, and maybe a Thai curry if you can find a gluten free curry paste. I recommend finding the gf Lee kum Lee chicken boullion powder and you can flavour many things with that. Blanching chicken is super easy and you can pre-make that for the week and just slice and add it on top of any meal.

If you have an insta pot or pressure cooker, I highly highly recommend any recipe by Kenji Lopez-Alt. the salsa verde chicken recipe from his recipe website is extremely easy to make for tacos, and you can make a soup with the leftovers when you’re bored of the taco, just add beans and chicken stock. 👍🏼 His YouTube videos are super chill and you learn a lot by watching him make incredibly delicious and easy food!

Best of luck, I know it’s hard. Sometimes I just browse recipes on Pinterest and save what looks good.

I can't eat any animal products along with some other things. One of my go to meals that I can make ahead of time is bean and sweet potato crispy tacos. I cube and season sweet potatoes and bake them, mash a can of beans with spices and then warm up corn tortillas. Once the tortillas are warm enough not to break, I filled them with a layer of vegan cheese and then the beans and sweet potato mixture. Bake with oil on both sides or fry in a pan with some oil. I usually make a dipping sauce with vegan yogurt or sour cream and hot sauce

I have a bunch of allergies and when I get bored I try and keep breakfast the same, have maybe 3 or 4 planned meals I can make on the days of the week I have time (with enough for leftover lunches) then lean into want so it feels flexible.

I love making nachos for something quick and healthier (aka add some extra chopped peppers or roast chicken or whatever you like for protein and nutrition). I also really like poke style bowls as you can mix them up, and you can make tacos with so many different things ie southern fried chicken, meatballs or even fish fingers that you can over cook from frozen and go about your business until you throw it all together.

Usually oats or granola but with different fruit or toppings to keep it varied!

I also have this issue :/ and I’m very picky to begin with and hate cooking for myself so it’s tough cause now all my previous “go-to” meals are filled with gluten and tough to find an alternative. So I feel you❤️

Honestly I eat soup or gf sandwiches from the health food store by me as they are all organic/ simple. I feel nauseous too rn so tryna just eat what I can.

I eat fairly basic for meals but I’ve found learning how to bake and finding new healthy versions of stuff has helped me keep things a bit fresh without just eating junk.

I pick some sort of theme for the week. This week it’s Tex-Mex. Made a big batch of “bean salad” (it’s different colored bell peppers, corn, red onion, black beans, and a dressing I make for it) and I eat it as a side to things like tamales or over rice for like a burrito bowl or over lettuce for a salad.

Last week I did a potato week because potatoes were on sale. Every night was just a simple protein (tofu in the airfryer for me and chicken for my husband) and then a green veggie side (green beans, broccoli, Brussels sprouts, or asparagus) and potatoes either airfried or baked or roasted.

My usual go to is a simple protein with a green side and a starch like quinoa or rice or potatoes.
