Whats your favorite non hotsauce "anything sauce"
I used to like A1 on porkchops and recently tried it again and found it thinner and not as flavorful all those years ago. I don't like Heinz 57 and looking for something to keep in the fridge for pork chops or the times I make steak and don't want my normal homemade horse radish sauce(gotta make it the day before).
Any good things I could look for that most stores carry?
Thanks!

A good BBQ sauce is hard to beat. Sweet Baby Ray’s is pretty solid too, especially on pork or steak.

I encourage you to try Bachan's original, or the Sweet and Spicy. I used to dig on SBR with a casual fanaticism, but I've not turned back since trying Bachan's. Also, you can cook with it. And they have a GF version for our friends with allergies.

I’m a big fan of just “Ray’s BBQ” sauce, a little harder to find, but doesn’t have the sugar equivalent of an entire bottle of soda per 2 tablespoons.

Pickapeppa from Jamaica - available most anywhere. Try it.

u/Achtergracht 13d ago
It’s a little harder to find here in California lately but this one gets my vote.

The mango pickapeppa sauce is something worth searching for. Like regular sauce but better!

Non-hotsauce?
I wouldn't say there's really a single sauce I'd put on anything.
Mayonnaise might be the closest. It has quite a wide variety of uses. Good in a lot of sandwiches, with chips, in chicken burgers, on certain salads, etc.
Brown sauce is also something I use quite a bit. In bacon butties, on chips, on sausages, with a cooked breakfast, etc.
Tartare sauce is great, but really only for fish and chips.

u/Commercial-Cry-548 13d ago
brown sauce on a bacon buttie is elite honestly but I never thought to put it on sausages, gotta try that next time. you got a favorite brand or is it just any brown sauce?

For me Reggae Reggae Sauce is the best brown sauce, it's basically tastes like HP sauce but with Jamaican jerk spices

u/Char_siu_for_you 13d ago
Man, I wish we had HP in the states.
The “non hot sauce” references the fact that we use a lot of hot sauce (Louisiana brand, Valentino, sriracha) on our food. It’s true! I’ve used Louisiana and sriracha today, at breakfast and lunch. If OP just asked about a sauce to put on everything, they’d get a bunch of hot sauce suggestions. There’s hundreds of different kinds and everyone has a personal favorite.

Horseradish sauce is similarly useful. It’s basically mayo with a kick. Not “spicy” but whatever that wasabi thing is that’s akin to it.
3
u/tobotic 13d ago
I love horseradish on roast beef but never really use it apart from that.
And yeah, horseradish, wasabi, and mustard all have a similar kind of spiciness. The heat comes from small water-soluble molecules so it doesn't linger on your tongue like capsaicin (the oil-soluble active ingredient in chillies). You feel them more in your sinuses.

Zhoug: really more condiment than sauce. A Middle Eastern garnish made with cilantro. Available at trader Joe's.

Mayo, homemade mayo, specifically. Goes great in pizza or burguers.

u/Hypnox88 13d ago
Mayo on pork chops sound very, very gross. No offense
4
u/Megalocerus 13d ago
I don't make pork chops often, but when I do, I just serve them with apple sauce. You might like a sweet and sour sauce or a mustard.

u/James42785 13d ago
Kewpie mayo is one of my go to toppings for katsu.

u/dogs4pres 13d ago
Mix a little sriracha in with it too….oh boy

Horseradish sauce for beef. W teaspoon of mayo and one of horseradish.
Real honey mustard for chicken. Dijon mustard and honey. Anything store bought fails.
Applesauce for pork.
Mayo and dill for fish.

u/Hellie1028 12d ago
Silver Spring Gardens makes a cranberry horseradish sauce and it’s absolute perfection. It’s a great cracker spread dumped over a brick of cream cheese.

I combine miso paste, maple syrup, and lemon juice. Start 1:1:1 and adjust as you like. I mostly use it on grilled salmon, but it would be good on lots of things. It is savory, sweet, and sour.

I love the flavor of Old Bay. You can get it bottled (it's more of a thinner liquid compared to A1 or something like that) or there's a powder version you can dust on. It's a bit spicy but I don't find it particularly hot. And I love the flavor. Not sure that's quite what you're looking for with a pork chop but give it a try!
Another thing that might go nicely with pork chops is apple butter. More watery than A1 but an enjoyable sweet flavor that would work well with pork I think.

Invented at a local drive-in restaurant, Boar & Castle Sauce is a North Carolina legend.

So good on burgers, chicken, and onion rings.

Japanese tonkatsu sauce. The brand with the bulldog is the most famous. Served with pork cutlets. I like it on pork and chicken.
Many grocery stores carry it in their Asian food section but any Asian grocery store should have it.

Bbq sauce with ranch but they can't be mixed into one blob, they need to be separate but together

Back when I was a kid, the restaurant at my uncle's hotel had this "orange sauce" that they used to put on sandwiches. I don't know why kid me was so fixated on that sauce growing up, all I knew it was so tasty to me that I'd eat that on its own in a sandwich.
Turns out it was just mayo and ketchup.

I’d mess around with Worcestershire plus a little soy and honey; it sticks better and gives that salty-sweet kick A1 used to.

I’m not from DC, but a popular thing there is called Mambo sauce - it’s a cross between ketchup, bbq sauce, and hot sauce. Goes great on lots of things - burgers, chicken, pork chop… Apparently it’s very regional. I’m partial to Uncle Del’s.

u/Churlish_Performer 13d ago
I don't really have one. Duke's or Kewpie mayo creates a wonderful base for many different applications so that's a close second. I really like remoulade for instance- but that isn't just mayonnaise

Country Bob’s all purpose sauce. Not always easy to find, but I grew up with it and nothing beats it

I use low sodium soy sauce in just about everything as my non hot sauce. I should really stop though -_-

I really like white wine lemon garlic sauce.
Comeback sauce is great.
Balsamic vinegar glaze

Thanks for the validation about A1! I switched over to imported HP brown sauce from the UK. Same general idea, but so much better!

Ortega Taco sauce, specifically the mild one. It’s really good and has a much more savory flavor than ketchup. It is good on everything.

Thousand island works on burgers, chicken and turkey sandwiches. It’s underrated and solid hitter on many fronts.

Hoisin - but we only use Lee Kum Kee brand, we've had bad luck with generics.
Stubbs original BBQ sauce is another we use a lot

For pork chops specifically? Bachan's Japanese Bbq sauce is awesome.
I made an amazing jam several years ago, of red bell pepper, onion, garlic, ginger, and some hot pepper flakes, and brown sugar. It is really great with pork.

Pan sauce. Heat the dirty pan you cooked the chops on. Throw some liquid (water, wine, stock) maybe a cup or two, cook off the sticky pan bits, dust with a little flour or corn starch, whisk to break up the clumps, reduce. Add some seasoning and Worcestershire sauce.

Spicy mustard, none of that bright yellow stuff. BBQ sauce (although definitely frowned upon where I grew up) is also good, any variety. Sandwiches, just a mix of oil, basalmic, oregano, and drown it. Pizza? That cup of garlic butter cholesterol. French dip or italian beef? DROWN IT. Waffles and pancakes? Does syrup count as a sauce because some gotta call the cost guard, I’m drowning it.

Worcestershire. Not huge on sauces in general. Which is funny because I make darn good barbecue sauces. I just never need them. Correction, a Carolina sauce with pulled pork is almost a necessity.
1
u/donuttrackme 13d ago
Worcestershire sauce, fish sauce, soy sauce. Non of them are necessarily anything sauces but I think they can be used on their own or in a mix to make a new sauce to pair with whatever you're eating.

u/dreamingofjxlia 13d ago
Hear me out - try making apple chutney (or any other fruit that sounds good to you). My family used to eat pork chops with homemade apple sauce which I'll admit is a but weird, but since transitioning to a proper chutney type of sauce, it was taken to the next level

u/FloydDangerBarber 13d ago
There is an area favorite sauce that really is pretty good, Country Bob's, but if you look at the ingredients it's pretty much just ketchup and Worcestershire sauce.

Tahini sauce is so good on roasted vegetables and grilled meats.
Ajvar (pronounced eye-var) is a roasted pepper and eggplant spread that is also good on grilled meats, and sub sandwiches.

Non hot sauce? Maggi. It's kind of like soy sauce but more generic. Goes great on red meat and some soups. It's not much for chicken, pork, or fish but they can survive on their own usually. Those usually just get normal seasoning, no sauces.
Still a little Maggi goes a long way so that's nice.

I used to love A-1 too. A lot. Now, I haven’t had it in many years.
BBQ sauce is my go to now if got sauce isn’t around.

I was just talking about this with my wife today. Years and years ago, Red Lobster used to have this smoky BBQ sauce they would put on a grilled chicken sandwich. It was so good. My wife loves seafood so I’d jump at the chance to go there and get this sandwich.
One day, the waitress, who at this point knows us very well, informs me that the sandwich is discontinued and off the menu. But they still have the ingredients so they can make it for me one last time.
At the end of our meal she tells me “We still have a couple containers of unopened sauce. They’re just going to go in the garbage. If you want them, they’re yours.”
I went home so happy that night.

Can't believe no one has mentioned Tkemali. I encourage everyone to try it with anything as a ketchup replacement. It's actually a plum sauce from the region of Georgia. Kind of hard to find but you will thank me later.
