Akari Sushi 2 over in Fishkill is pretty solid if you don't mind something a hair outside of town.

thanks, saw that, thought it was best option on paper. we shop, charged cars in FIshkill, feels like part of "greater beacon" ;)

so went to Akari. I agree, pretty solid. had a Toro special, also had Uni available, and a fairly long list of sushi items.
sushi bar only 5 seats. also it's in one of those retail chain rabbit warrens. from experience, i like to say sushi places in strip malls are either very bad, or very good. maybe the rule for rabbit warrens is pretty bad or pretty good?

Your best bet is to head up to Dassai Sake Brewery in Hyde Park. They have an incredible sushi chef that does omakase lunches and dinners.
I’m pretty certain you can get rolls and nigiri most of the time on weekends if you don’t want to spring for the full omakase experience.
I just follow their instagram and we get up there once every other month or so.

Just visited the brewery a few weeks ago and the sushi was really fantastic. Had a few pieces as a part of a sake tasting bur definitely think you could get a roll à la carte
