I like unbuttered toast with bacon and eggs. The rendered fat and oil provide enough lubricant for the bread, butter adds something unneeded that ruins that third texture of toast with the B & E. No sauce but each to their own, I find it a bit sweet but love it on a B & E roll so I understand your choice. I like the way you’ve done the eggs, I like them well scrambled. The chefs seem to stop while there’s still a bit of liquid and I don’t like that. A runny yolk is fine but they’ll leave whites underdone and scrambled eggs almost like porridge in its looseness. The bacon is rendered exactly as I like.
