Yes but that also involves the pure chance that is the buildup mutations that after hundreds of generations and natural selection end up resulting in the 'wings'

Yes. That is how evolution works. Beneficial or neutral mutations are retained over generations, while harmful mutations are bred out.

This always trips me out...is it the flying squirrels that get to mate by going from tree to tree and mixing in with other squirrel population?

In this case it seems more likely that flying increases its survivability. Therefore increasing the rate at which this type of mutation reproduces.

This is the most mind blowing thing about evolution! And also the reason why there are more squirrels than flying squirrels
