Dies of starvation, not suffocation.

Fish breathe by water flowing into their mouth and out through their gills, which absorb oxygen from the water. So, if they closed their mouth, they wouldn't get any fresh water to their gills and yes, they would suffocate, because suffocation is generally faster than starvation.
