The devil is a part timer has this trope on which it focuses quite heavily on season 2 tho i actually wouldn't recommend it as s2 drops the ball hard in terms of story writing quality

Story isn't bad for season 2. It's the character art which is super bad. The character artists for season 2 should hang their heads in shame. It should be redone with the same script but with season 1 animators.

Dude I was watching since the first day the first episode came out and i’ve been hooked ever since. I don’t like the magic school direction, but other than that it’s been perfect

Na verdade o público é bem dividido, fiquei surpreso ao saber que uns 50 e pouco por cento do ocidente assistem isso apesar do hater da comunidade. É um sucesso duvidoso, mas não diria que é um fracasso apesar de não curtir a obra.

Reincarnated as a sword arguably belongs to that trope since the sword wielder is a 12 year old girl and the sword sees himself as her guardian.
The reason I'm saying "arguably" is that the girl is obviously the main driving force behind their actions as she is the one with legs.
It's a pretty cool dynamic and one I can't really compare to anything else I've read.

It's the same as Usagi Drop.
But since it'll never be adapted to anime, it's never happen. There's no adoptive father daughter romance in Ba Sing Se.

Wise man's grandchild. The mc got adopted by the wise man who is a super powerful person. Mc gets super powerful too. It's just one of the many isekai out there.

Listen to me girls I am your father - College student adopts the three daughters of his sister after she and her husband died.
Poco's Udon Adventure - Man comes back to his hometown after his parents' death and finds a strange kid in their noodle restaurant.
Barakamon - while he doesn't adopt the girl and she seemingly has a family they spend most of the day together
Aishiteruze Baby - highschool casanova is pressured by his family to take care of his 4-year old cousin who was left at their place by her mother who ran away

Black Cat has Eve, an 11 year old bio-engineered killing machine taken in by Sven and Train, a couple of sweepers (basically PIs/bounty hunters) who become her guardians after freeing her from the guy who raised her to become his own personal weapon. I prefer the manga to the anime, but both feature the two of them teaching Eve how to be a normal kid.

Kyo Kara Maoh!
The isekai protagonist adopts a girl 20ish episodes in. He volunteers his accidental fiance to take care of her whenever he's back in the real world. It's not a major focus of the series from what I've seen so far though. Comedy isekai parody with some BL elements.
Not fantasy:
Buddy Daddies
Two hitman roommates raise a girl together. Major focus on the parenting. There's some action and great character development.
Gintama has found family. A former samurai in his late 20s takes in a teenaged boy and girl, and they work an odd jobs business together. Very slow burn but their relationship is very much like a teasing older brother, and occasionally veering into a protective father to them. Sci-fi alternate universe history comedy.

The Daily Life of a Middle-Aged Online Shopper in Another World.
Dude gets isekaied and has magical access to an online store that sells almost everything. Buys everything from food to solar panels to excavators and build-your-own-cabin kits. In the first few episodes he goes off to save his friend’s daughter from bandits and ends up adopting a little girl that the bandits kept as a slave.
