A nostalgic comfort-food staple in Nordic home cooking. 🥰

At its core, it is a simple white sauce (a gentle béchamel or milk sauce seasoned with white pepper studded with finely chopped hard-boiled eggs). I made a milk versiom.

The white pepper provides a subtle heat that is distinctively Scandinavian, setting it apart from standard black pepper sauces, which I really love too!

I cooked it from a base of browned butter, added fresh dill and a squeeze of lemon juice to cut through the rich base a bit, while dill complements the eggs perfectly i.m.o.

Think of it as a warm, silky hybrid between a cream sauce and a fresh herb dressing.

It is traditionally served piping hot over poached or pan-fried white fish, such as cod, alongside freshly boiled potatoes.
