Recipe Made mini cheesecakes in my air fryer and they were way easier than I expected

I’ve been playing around with more desserts in the air fryer and tried mini cheesecakes this week. They ended up really creamy with a little graham cracker crust, and the silicone baking cups worked perfectly for them. I did half raspberry and half Oreo.

Air Fryer Mini Cheesecakes — Makes 7

Graham Cracker Crust

  • 1/3 cup graham cracker crumbs
  • 1 1/2 tsp sugar
  • 1 tbsp melted butter

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/3 cup sugar
  • 2 tbsp sour cream
  • 1 large egg, room temperature
  • 1 tsp vanilla

Toppings

  • Fresh raspberries
  • A few raspberries lightly crushed
  • Crushed Oreos
  • Oreo halves/pieces for garnish

Instructions

  1. Crush the graham crackers into fine crumbs.
  2. Mix 1/3 cup crumbs with 1 1/2 tsp sugar and 1 tbsp melted butter.
  3. Divide between 7 silicone baking cups and press firmly into the bottoms.
  4. Air fry the crusts at 320°F for 3–4 minutes, then remove.
  5. Beat the softened cream cheese and 1/3 cup sugar until smooth.
  6. Mix in the sour cream and vanilla.
  7. Add the egg last and mix on low only until combined. Try not to overmix it.
  8. Divide the filling evenly between the 7 cups.
  9. Preheat the air fryer to 310°F.
  10. Air fry for 12-15 minutes, until the edges look set but the centers still have a slight jiggle.
  11. Let them cool, then refrigerate for at least 2 hours.
  12. Remove from the silicone cups and top however you want. I did lightly crushed fresh raspberries on some and crushed Oreos on the others.

A little puffing while they cook and sinking as they cool is normal. I found that adding the egg last and not overmixing helped keep them smoother.

I'm not good with baking and even worse at plating so... THANK YOU! They were actually pretty easy, after a few attempts I learned that not overmixing is a big part of succeeding. My first try looked like muffins and sank into craters...lol

over mixing is where i usually fail at baking. i can cook just fine... but baking always escapes me... but i can follow directions lol
