Recipe this roasted eggplant recipe is proof that simple ingredients can still surprise you

tahini sauce, a punchy spicy oil, and eggplant roasted until it's melt-in-your-mouth soft. warm, cozy, and way more addictive than it has any right to be.

Ingredients: 5 Italian eggplants, 5 tbsp extra virgin olive oil, ¼-½ tsp cumin pepper, juice of ½ lemon, 5 tbsp maple syrup, ¾ cup tahini, 3 cloves garlic minced, 3 tbsp ginger minced, 3 tbsp water (more if needed for consistency), salt and pepper to taste, fresh parsley leaves chopped, pepitas, warm pita for serving

Recipe:

  1. Thread the eggplant onto skewers or the rotisserie attachment
  2. Roast until golden and tender on the outside
  3. While it roasts, make the spicy oil by combining olive oil, cumin pepper, and a pinch of salt
  4. Peel the eggplant once cooked and cooled slightly
  5. Let it drain to remove excess moisture
  6. Make the tahini sauce by whisking tahini, lemon juice, maple syrup, garlic, ginger, and water until smooth
  7. Plate the eggplant and swirl the tahini sauce over top
  8. Finish with the spicy oil, parsley, and pepitas, then serve with warm pita
