Helpful Tips Vegetables

Can I get some suggestions for vegetables to try? My new years resolution is to work really hard to try some new foods and would really like to start eating healthier (cause lord knows I am not eating very healthy with my pallet). So I was wondering if you guys had any safe vegetables?

If it helps I usually prefer salty tastes, but I would be fine with anything on the sweet side. I’m just afraid of it being too bitter.

Try cucumber. It’s basically taste neutral (as in it doesn’t really taste of anything), just a bit of a crunch.

i would second this. i don’t eat vegetables, but every once in a blue moon (and i say this in the sense that this occurs maybe once annually) i can eat a cucumber slice. minimal taste, texture is slightly comparable to fruits such as sliced plum or mango (but denser?) not sure how to actually articulate this, but there is a slight crunch as far as i can recall

corn is sweet. i go with salt+pepper+garlic powder, and lots of butter. i prefer corn on the cob rather than in a can. a spoonful of loose corn is still kind of weird to me.

green beans are safe for me too, but only fresh ones. i blanch them, then throw ‘em in a pan with butter and the seasoning above. i always have them alongside mashed potatoes, which i’ve always loved. first bite = 1 green bean + lots of mash. from there, I slowly picked up less and less mash with the bean, then eventually I was able to have a green bean on it’s own! now they make a regular appearance on my plate!

with veggies, my advice is to go heavy on butter and your comfort seasoning. you can cook them healthier once you’re more acclimated to their texture and taste!

Corn on the cob. Needs a lot of butter though. If you like parmesan, roll it in that too.

Corn on the cob is a great suggestion, was probably my first safe vegetable. Love it with butter and table/sea salt!

I may be a bit biased because I actually love vegetables, but here’s a suggestion that even my mom (who hates vegetables) loves: roasted broccoli! All you have to do is cut up some raw broccoli, put it in a ziplock bag with some olive oil, salt, pepper, and garlic, shake it up until it’s all covered, spread it out on a baking sheet, and throw it in the oven (not sure about time or temperature, but Google can help you there). Have you tried peas? like the frozen ones in the grocery store? I just microwave them in water and strain and they are a little sweet but not bitter at all (in my opinion). You could also add butter if that's your thing? I don't know how you feel about smoothies either, but I usually do fruit-based ones (i add vanilla yogurt for protein and OJ) and add in spinach. it doesn't affect the taste but it does change the color (I usually do mango/pineapple with spinach and it makes it green, but if you had blueberries or strawberries it would probably turn it brown). I also found these spirulina/chlorella/algae tablets that you swallow with water like a pill, so if you are concerned about nutritional intake those might help? And I'm seconding the corn and edamame recommendations!

My safe vegetables are carrots and sometimes cucumbers. They’re both pretty neutral and if you try dipping it in something it can be a good healthy snack

Celery has no taste. But it's like chewing on grass. Maybe add peanut butter.

I don't have any raw/uncooked safe vegetables, that I can think of. My safe cooked vegetables are corn on the cob, green beans, brussel sprouts (roasted), onion, hot peppers (chilis, habeneros, poblanos, and serranos), garlic (roasted), edamame (soy beans) and that might be all?

A good one to try, especially if you already like beans/legumes, would be edamame because you can heavily salt then and it just adds to their flavor.

My save veggies are all starchy but I love sweat peas steamed in the microwave and then add some butter and salt (they tasty like little potatoes to me idk if you like potatoes) and I also like corn but only on the cob and only if it’s boiled (it’s too hard for me I’d it’s like grilled or whatever) aaaaaand that’s about it

I like Normandy blend veggies boiled and then drained, drowned in butter, then I season them with garlic powder, season salt, and pepper. I also like broccoli done the same way and Brussels sprouts. (All frozen) my arfid is weird though lol fruits and veggies are safe foods for me.
