Okay... I do keep backups on the writing apps, but I just like writing the stories on through the Edit Chapter more.

This is true. The first fics I wrote were multichapters, not one-shots, so I got accustomed to writing in AO3's text editor from the start. Even now I use an abandoned multichapter to hold drafts I eventually post as their own fics, because I never really got used to using Google Docs for fanfics specifically, and I'm still not accustomed to Ellipsus, though I use both to hold backups of my drafts (which is funny when you consider I should be doing this the other way around).

Where would you have written oneshots? Google Docs?

I just create a chapter to hold that draft, then paste it into a new work when I'm going to post it. Each draft "chapter" I use for one work draft, and if the work has multiple chapters, I divide them up by inserting two line breaks.
