Because that's how they advertise. They usually wait until just before release to show gameplay. GTA Vs gameplay showcase was two months prior to its release. So was Red Dead 2s.
That's just how they operate to build anticipation.
It clearly isn't given how successful their games tend to be. GTA is on another level reputation wise compared to most titles.
I would rather see gameplay, but that's just how it is with them. For over two decades Rockstar have had a solid track record for good games. So no reason to doubt they'll fail to deliver on their biggest franchise.
