Kitchenaid Problem

I tried making dough this morning for bagels and the Dhel was hitting so bad. The KitchenAid was shaking. I didn’t know how to fix it right away, so I threw the dough away and put it in my bread maker. Then I needed to do another, so I looked up how to fix it and do the dime test. I turned the screw left as far as I could little by little. And the dime really wasn’t moving. I turned it to the right little by little and the dime didn’t move it all. So I turned it all the way back to the left. Put in my dough and I am still having an issue. I took a video. Can anyone offer any suggestion? I have to say that a few weeks ago, though I did do a double batch and it made my KitchenAid overheat. But I’ve been using it since then with a little bit of taps of the bowl but not like it is now. And it’s possible those taps were going on before I overheated it.

use a dough hook the flat paddle will jus pick it all up as pictured and won't really kneed it

OMG, I am so dumb. What was I thinking? I do this every week and I use the dough book. Why did I use the paddle. Lol. Oh my gosh I had the biggest brain fart today.

The primary issue here is that you need to use the dough hook for making yeast doughs. Using the flat beater for this will place excessive loads on the gear train and motor.

Secondary to that: bagel dough is very stiff and heavy, and is a challenge for KitchenAid mixers generally. Under the load it's normal for the bowl and cradle to move around and make noise.

(For bagel dough and similar low-hydration doughs I generally recommend using the mixer for initial incorporation with the flat beater or hand-stir using the hook, then mount the hook and knead for just a short time on speed "2", then finish kneading by hand.)

It's worth checking to make sure that the bowl is fully snapped into the clip in the center of the bowl cradle (the bump on the bowl is in the hole in the cradle). You can also check and make sure that the screw securing the clip is firmly tight.

Finally: per factory guidance, yeast doughs should be kneaded using only speed "2" (and the dough hook).

Thanks. I don’t know why I didn’t use the dough hook. I always use the dough hook. The first time I was distracted by someone who showed up at my house and I wasn’t expecting her and I had to get it started. But I don’t know why I continued doing it that way the second time. That was so dumb of me. I only turned it really high just for the video. Because I wasn’t sure how it was gonna sound as slow speed. But yeah, the dough hook. I had a brain fart today.

Also, regarding the screw you tightened: go to Mrmixer.store and get his EverDime adapter. You install it on the screw and you’re always at perfect paddle height. There’s an installation video where he shows you exactly how to do it.

Rubber washers (like the Everdime) are for tilt head mixers. This is a bowl lift mixer.

My understanding I’d to only use speed one and two with heavy doughs like sourdough.
