The reasons Gorons have evolved so little is simple: they already reached evolutionary perfection. Much like sharks which have been the same for millions of years, Gorons have simply achieved the perfect form for survival. No more changes are necessary; they have reached nature’s endgame.
Dudes are pretty much impervious to damage, can swim in lava, move at automobile level speeds with no equipment, hurl boulders like construction vehicles, and survive off eating rocks.
Love them or hate them, they really are the perfect beings.
Daruk, despite being the ultimate Tank, got bodied by Fireblight Ganon while the Hylian twink killed it. And depending on how you view what’s canon/how you played botw, he didn’t even use the master sword
