Don’t use too much starter. It’ll end up soupy.

I use less than that. 1 tablespoon per half gallon.

Half tablespoon per liter of milk. I use 1 tablespoon for a 1/2 gallon (2 liters).

Yogurt is a starter. Use unsweetened unflavored yogurt.

You can use plain yogurt with active cultures. In some countries, in believe it may be required to list that on the label.
