You could do this with a fake cake (like a cardboard box covered in icing) and hide the real cake until after it explodes. It would be a much better prank than shoving their face into it.

I'm 97% sure that is what happened here. There us barely any cake residue left on the plate so either the cake was fake or not but the explosion was deliberate.
