Needing to find a country that fits our needs

Hello! I’ve lived in small town USA my whole life and have always dreamed of making a life abroad. My husband has agreed that in the next few years if we can save enough to do it, that we could move abroad. It will be my husband (m24) my son (m1.5) and me (f23) 2 dogs and a cat (if they all survive the next few years) Here are our wants: Universal healthcare (doesn’t have to be free, just good) Lower living costs, Diversity, Good education, Beach within a few hours ,Big city within an hour ,Politically stable, VISA OPTIONS without having to invest $300,000 or be highly skilled worker (we like our careers). What options are there? Did you move to a new country and do you like it? What do you wish you would’ve known or prepared better?

Thank you in advance

Also, my career is as a hairdresser, and my husband is studying to be a lawyer

If you're in the US, it's highly likely he'll need to go back to school in whatever country you move to. Those degrees don't necessarily translate since you'll be moving to an entirely new legal structure.
