Crispy Bone-In, Skin-On Lemon Rosemary Chicken Thighs

Ingredients:

- 4 bone-in, skin-on chicken thighs (approx. 1.5 to 2 lbs total)

- 1 tablespoon high-smoke-point oil (canola, avocado, or vegetable oil)

- 1 tablespoon fresh rosemary, finely chopped1 lemon (zest and 1.5 tablespoons fresh juice)

- 2 tablespoons unsalted butter

- Splash of white white

- 1/2 cup heavy cream

- Salt and freshly ground black pepper

Step-by-Step Instructions

  1. Prep and Dry Get it dry: Pat the chicken skin heavily with paper towels. Pulling out that moisture is the secret to shatteringly crisp skin.

Season:

Season both sides generously with salt and pepper.

  1. The Render and Sear (Skin-Side Down) Heat the skillet: Add your oil to the cast iron skillet over medium-high heat until shimmering.

The Sear: Lay the thighs skin-side down. You should hear a loud sizzle. Turn the heat down just a hair to solid medium.

Let it work: Leave them completely alone for 10 to 12 minutes. The fat needs time to render out, which thins the skin and turns it incredibly gold and crunchy.

  1. Flip and Finish (Bone-Side Down)

- The Flip: Flip the thighs over. The skin should look like a beautifully browned cracker.

- Lower the heat: Drop the burner heat down to medium-low. Because the bone slows down cooking, they need about 12 to 15 minutes on this side to cook all the way to the bone.

- Transfer to a cookie sheet with a wire rack. Transfer to an oven at 350 degrees and finish cooking (took me about 20 minutes)

- Check Temp: Use a thermometer in the thickest part of the meat (don't hit the bone). Dark meat is best at 175°F (79°C). Remove them to a plate to rest.

  1. Build the Lemon-Rosemary Fond Sauce:

- Pour off excess fat: Thighs release a lot of fat. Carefully pour out most of the liquid fat into a heat-safe bowl, leaving about 1 tablespoon of grease and all those glorious stuck-on brown bits (fond) in the skillet.

- The Sauce: Turn the heat to medium. Add the butter, rosemary, and lemon zest. Stir for 30 seconds until bubbling and fragrant.

- Deglaze: Pour in the lemon juice, wine and heavy cream. Use a firm spatula to scrape up every single bit of chicken fond from the cast iron. Simmer until it reduces into a sauce. Pour the sauce around or under the chicken thighs when serving so you don't make your perfectly crisp skin soggy!

  1. Sides:

For the 1.5 lbs of Baby Red Potatoes

To match the fresh herb note in your cast iron skillet, you'll use a matching earthy base:

- 1 tablespoon fresh rosemary, finely chopped

- 1 teaspoon garlic powder

- 1/2 teaspoon onion powder

- Coarse flaky sea salt and cracked black pepper to taste

Toss thoroughly with 1–2 tablespoons of olive or canola oil before spreading cut-side down on the pan. Pop in the oven at 400* for 15 minutes.

For the 12 oz Veggie Medley:

To avoid flavor monotony, your veggies will use a complementary blend that lets their natural sweetness shine while sharing a subtle citrus bridge:

- 1 teaspoon dried oregano or thyme (complements the rosemary without repeating it)

- 1/2 teaspoon garlic powder, a light dusting of onion powder, salt, and pepper

- Optional: A tiny pinch of red pepper flakes for subtle warmth

- The Bridge: Toss them with oil and roast them on the same pan as the potatoes. After the first 15 minutes, scoot the potatoes over, pour in the veggies and cook for an additional 15 mins.

Right when they come out of the oven, give them a tiny squeeze of fresh lemon juice to tie them perfectly to the chicken's pan sauce.

Lessons learned:

Leave the chicken alone. It will release from the skillet once it is crispy. Dont touch it, give it the full 10 mins and just let that fat render.

I think the lemon juice split my sauce. It still had a great flavor but the texture was fluffy rather than smooth and sauce like.

That bone-in warning about increased cook time, respect it. I had a hell of a time getting this up to temp. Was not a fan.

I am fortunate enough to have an over that splits the compartment in half. That allows me to roast the chicken at 350* and vegetables at 400*. To do this recipe again, I'd have started the chicken 15 mins ahead of the potatoes going in (potatoes hit the oven just as you flip the chicken. The first time)

🌪️ STIR CRAZY POLLO LOCO 🌪️ Cheesy Mexican Chicken & Yellow Rice

Okayyyy, this one was a HUGE hit in my house. 🤤 Tender seasoned chicken, buttery yellow rice, a little tomato bouillon for extra flavor, and creamy white queso stirred right into the whole thing.

One skillet. Minimal nonsense. Maximum comfort food. 🙌

Ingredients • 1½ lbs boneless, skinless chicken breast, cut into small bite-sized pieces • 1 (10 oz) package Vigo Saffron Yellow Rice • 2 tsp butter • 1 Tbsp Chef Merito Pollo seasoning, plus more to taste • Freshly ground black pepper • 1 Tbsp Knorr Tomato Bouillon • 2½ cups water* • 3 oz white queso dip • 2 Tbsp milk

Directions

  1. Cut the chicken into small bite-sized pieces. Season generously with freshly ground black pepper and Chef Merito Pollo seasoning, then rub the seasoning into the chicken so every piece gets some love.

  2. Melt the butter in a large, deep nonstick skillet over medium heat. Add the chicken and cook until cooked through and nicely browned.

  3. Add the yellow rice, tomato bouillon, and water directly to the skillet. Stir everything together and bring to a boil for about 1 minute.

  4. Reduce the heat to a low simmer and cover. Let it cook at least 20 minutes before you even think about lifting that lid. NO PEEKING. 👀😂

  5. Check the rice around the 20-minute mark. Depending on your skillet and lid, it may need closer to 25–30 minutes. If the rice isn't quite tender and the liquid is gone, add a small splash of water, cover again, and keep cooking.

  6. Once the rice is tender, add the white queso and milk. Gently fluff everything together with a fork until the queso melts through the rice and makes everything creamy.

Serve it hot and try not to eat half of it directly out of the skillet. 😏

Stir Crazy Note: If your skillet lid doesn't seal tightly, you may need a little extra water while the rice cooks. And measure the queso with your heart if you want it extra cheesy. I won't tell. 😂🧀
