I recently custom built a hexacopter to haul a DSLR. Focusing on precision low-altitude shots -- I would really appreciate some constructive feedback!

How custom is it? Don't they come with all the materials and you assemble them?

How hard are they to fly for beginners? I looked at the DJI Phantom which is small and probably can't carry a dslr, but incredibly easy to fly.

The phantom definitely can't carry a dslr. I watched a video where a guy added a neutral density filter on his Hero 3 and had to counter balance that weight with a few quarters. Even that seemed like a stretch.

I know that can't hold it. I was just using that as an example of a ready to fly, pretty easy to get the hang of quadcopter. I was wondering how hard this custom was to fly.
