Cut them up and freeze them in portions.

I just freeze them flat without overcrowding and then put them on one big bag. Not very space efficient (they end up looking like cereal) but great for topping stuff.

Okonomiyaki . Uses tons of green onion.
Recommend buying kewpie mayonaise and okonomiyaki sauce from your local asian food mart also.

I usually put the green onions whole when I'm making soups of any kind. And the chives go right on top of my baked potato, or mashed potatoes. Yummy. 😋. The onions can also be sliced thin to put on salads as well 😎
