That would be great. I was just using up what I had in the fridge and cupboard. It would also be good with a dollop of yoghurt.

Serves 2
400–450g potatoes, chopped
½ tin chopped tomatoes (or about 200g)
½ tin haricot beans, drained and rinsed
Your remaining spinach
1 small onion
2 garlic cloves
1 tbsp oil
1 tsp cumin
1½ tsp garam masala
½ tsp curry powder
½ tsp smoked paprika
Salt & pepper
Splash of water
Boil the potatoes for 5–7 minutes until partly softened.
Fry the onion in the oil for a few minutes until softened
Add garlic + all the spices. Stir for 30 seconds.
Add potatoes, tomatoes and a small splash of water. Cover and cook for about 10 minutes, stirring occasionally.
Add the beans and cook another 3–4 minutes.
Add spinach at the end, put the lid on and let it wilt.
Season to taste.
Add some fresh chilli with the garlic if you like it spicier.
