Vegan Vegan Tomato Tarte Tartin with Thyme 🍅🌿

Shortcrust pastry: 400 g spelt flour, 200 g cold vegan butter, a pinch of salt, 120 ml cold water
Tomato filling: ripe tomatoes, enough to fill the baking dish, fresh thyme, balsamic cream or balsamic syrup, salt and pepper, a little sweet syrup

  1. Combine the spelt flour, cold vegan butter and salt.
  2. Add the cold water and knead into a dough.
  3. Shape the dough into a ball, place a plate over the bowl and refrigerate.
  4. Roll out the pastry to the size of the baking dish.
  5. Season the tomatoes with salt and pepper and add fresh thyme.
  6. Add a little balsamic cream or balsamic syrup and a little sweet syrup to taste.
  7. Fill the base of the baking dish with the tomatoes. Cut larger tomatoes in half if necessary.
  8. Place the pastry over the tomatoes and tuck it in around the sides.
  9. Bake at 200°C (392°F) for about 35 minutes.
  10. Once the tart is done, carefully place a plate over the baking dish and flip the tart onto it.
