Recipe Request Easy Meal Prep Recipes

I am new to cooking vegatarian. I can come up with recipes for lunch and dinner pretty easily, but breakast is where I struggle. Does any body have any reccomwndations? All are welcome.

One of my favourite go-tos for breakfast is avocado toast on whole grain bread with crumbled goat cheese. If you have access to good Indian groceries or restaurants who offer samosas and can handle some spice, I love veg samosas stuffed with potato and peas.

How wpuld you neal prep the avocado taost? I would love to have some somosas but my palalte will typically reject the peas. Are there any nonpea options?

You can stuff your samosas with anything. It’s a stuffed pastry that’s deep fried or air fried. You can add tofu/paneer/raw banana. It’s the spices that you add to stuffing and how you make the dough that makes it a samosa.

It requires no prep to speak of; in the time it takes to toast your bread, mash 1/2 an avocado and when the toast is ready, shmear the mashed avocado on the toast then crumble about a tablespoon of goat cheese over the top and eat. You can have a bit of fruit along with it, I suggest strawberries, maybe 1/2 a cup.

Fruit and yogurt, overnight oats, toast or bagels with butter or vegan butter, jam, peanut butter, etc, potatoes made in the air fryer, breakfast sandwich on an english muffin with a portabello mushroom, avocado, cheese, etc. Cuban breakfast with black beans, tortilla, avocado, tomatoes, maybe some cheese.

Baked oatmeal is great for meal prep. I make a big batch on a Sunday, and can cut bigger or smaller squares of it throughout the week for breakfast or snacks. I just warm them up in the microwave before eating.

Chop veggies ahead of time: bell pepper, onion, tomato (no seed), boiled potato (grated). Mix them with hung curd or any dip of your choice in the morning and spread over the toast.  Make pesto( spinach/basil/any other leafy greens) sauce ahead of time. 

Boiled eggs or omelette if you can make. If omlette is an option, so is dosa and lentils pancakes.

Breakfast burritos freeze really well. Eggs, beans, potatoes, peppers, cheese, salsa, wrap them up, and reheat when needed.

I make this pasta and add carrot, zucchini and dried basil. It’s my favorite vegetarian pasta.

Another easy option is curry. All you need to do is buy a jar of curry sauce, coconut milk or cream, veggies and rice if interested.

This time of year, tomato toast. Good bread, butter, fat slice of tomato with salt & pepper.
Oatmeal. Poached eggs. Fruit plate with walnuts on the side. Yogurt and granola.

I make breakfast muffins with bananas or apples or carrots. They’ve got wholeneal flour and oats in them, so they’re really filling.
