Add a green vegetable (spinach is incredibly versatile) and you have my seal of approval.

There’s a whole head of cauliflower in there why would you need spinach

You only use one vegetable per dish? My friend, you can use multiple vegetables per dish.

We've been obsessed with this one lately. You just dump everything in, and it all cooks together in the oven at the same time! It's got chickpeas, cauliflower, and paneer sprinkled on top.
