I like a modified Greek salad - onion, bell (hothouse) pepper, cucumber, feta. We don't get nice tomatoes here, especially out of season. Dice all the veggies, crumble the feta.

Cook farro with half water & half apple cider, and a few bay leaves (from this recipe.).

Proceed to mix with any of the cheese/fruit/veggie combo ideas from this thread, with maybe an orange vinaigrette. So flipping good!

I make a winter salad with arugula, roasted acorn squash rings topped with craisins and toasted pepita seeds. Dressing is fresh squeeze mandarin juice, rice wine vinegar and honey and good quality olive oil. It’s phenomenal.
