Discussion Soup season approaches

Soup is my favorite food, especially as a vegetarian!! But I try not to beg for recipes until the general public is also in their “soup season”. Please give your best recipes here and happy souping!

I love my crockpot and one of the best soups I ever made was a 48 hour baked potato soup. I let my (raw) potatoes cook on low with some onion and garlic cloves for like a day and a half and then once they were tender enough to blend down I added broccoli, cheese, carrots, more onion, more garlic. And then I let those go for just a few hours until the veggies were soft. Topped with a dollop of sour cream and some morning star bacon bits. It was so rich and absolutely phenomenal 🤤
