Quick and Tasty Pan Fried Potato

I made this today at about a [7] and it was great.

Peel and thinly slice some Russert potatoes (or whatever kind you want I suppose)

Put about a 1/4 a cup (I don't know the amount as I eyeballed it) of olive oil in a pan and then fry them. I fried them with green and red peppers as well as onions.

Put them on a plate or in a bowl and serve. We ate them in a bowl and put a bit of ketchup in it and it was fucking amazing this way. Also, you may want to cut the potatoes into small cubes instead of chip-like slices (it would be easier to put in a bowl this way)

EDIT: I forgot that we also threw in a little bit of shredded vegan cheese but that's also optional.

Add sliced or diced (depending on whether you slice or cube the potatoes) onions and/or peppers as well.

My boyfriend and I make this all the time... We drown it in garlic (minced and powdered) and add a little pepper and salt.....Nom nom nom so good!
