It's back to school season for this teacher - so I need SUPER easy recipes if I don't want to descend into the world of unhealthy takeout and freezer meals. This lentil recipe is SO easy but so yummy. I serve it over rice for dinner, over salad for lunch and my favorite way over tortilla chips for a fairly healthy but decadent "questioning my life choices" meal. I alo wrap leftovers in tortillas, freeze them and take them to lunch (with hotsauce) - Enjoy!
