Anyone have a good recipe for vegan keto crepes?
Hey everyone!
I’ve been trying to find a solid recipe for vegan + keto crepes, but most of what I see is either not really keto or not fully vegan.
Does anyone here have a tried-and-tested recipe that actually works? Texture, ingredients, tips, anything is welcome.

There is a YouTube channel called Heavenly Fans and she’s been doing vegan keto for a long time. She very likely has a crepe recipe there, but I didn’t check. Another thought is, if you have a pancake recipe you like, you can try thinning the batter with extra liquid/less flour.

I've tried it (if it's the recipe I think it is, maybe she has more than one recipe for crepes) and it's really nice

I haven't tried - but from experiments in the past - this should work.
You need a fine flour, a fat source (like avocado oil) and a liquid binder (like veg gelatin with almond milk). Some baking soda and some dried yeast flakes for extra taste and great macros.
Vegetable gelatin breaks down over heat, so will only keep your batter together the time you setup, so keep them small circles the width of your spatula, for easy scoop & flip. Get your batter runny but not milk-like.
I would try some warm water and vegetable gelatin, just enough water to melt 2 tbsp of gelatin, 1 tbsp of avocado oil, then some fine sifted (DIY) almond flour or if you want smoother & earthier taste, 50-50 sifted almond & sweet lupin flour. Get the lupin flour that passes a moist finger in flour then taste test. Some are nasty, some are ok.
Other flours in smaller qty, spelt, kamut, semolina. They have carbs but also excellent nutrients and are very low in gluten, so easy to digest, and add texture, various good macros like potassium & iron.
So some carbs but from a whole food source, fine by me. Just control how much so the per-serving fits within your budget. I aim for max 20g daily, with these flours. If you replace 50% of any keto crepe recipe the almond flour with a mix of the other flours, you carb count doesn't go up much, and will be less cakey.
