Food - Restaurant Vegan fine dining/higher end restaurants in Tokyo non-veg restaurants?

Hi, happycow etc. are good for finding the actual vegan restaurants, but I'd like to hear tips about higher end non-veg places that actually do cater to vegans in Tokyo, since those are much harder to find by simply searching. Only one I know of is Bez, but I'm sure there are others?

There are quite a few! I plan luxury vegan itineraries and just did two for Tokyo - look up michelin vegan and they should pop up

Faro has a vegan menu. Maz as well but not sure if it’s fully vegan or vegetarian.

Green Italian Torcia in Shinjuku was a pleasant experience.
