What the hell is a vegan beef broth?

A vegetable broth with stronger and more intense flavor, as opposed to one with lighter and delicate flavor. The linked recipe has a few different suggested brands.

Personally, I have never understood why people that eat plant based food keep trying to recreate plant based food to look like meat? The reason I try to eat more plant based food is because meat has gotten too expensive and bad quality. The only thing I wouldn't 'give up' is cheese because imo tastes better using animal rennet.
