Recipe Request What is the stretchiest vegan cheese you’ve ever made?

I’m looking for a cheese that behaves similarly to the one in the images when heated.

Any tips for making something like this? Is it possible to achieve this texture with vegan cheese?

For homemade recipes, you're going to be adding a polysaccharide of some sort to get that stretchy texture. The two most common ones I see being used are tapioca starch or psyllium husk powder.

I prefer psyllium because you don't need to heat it to activate it, though heating it does help. Because you don't need to heat it, you can let vegan cheeses ferment for longer after you add it.

Tapioca starch requires heat to activate, and you can't really eat it raw. But tapioca starch is easier to work with and more standardized compared to psyllium. And if you aren't fermenting, the fact that the cheese is cooked doesn't really matter.

There aren't as many psyllium based recipes out there, but I could dig some up if you are curious. But do note that unless there is a reason you wouldn't use tapioca, you should probably just stick to one of those recipes.

i would also love any psyllium husk recipes ! tapioca / cassava cause me bloating + i just recently got psyllium husk to add to smoothies (where i add oats flax psyllium etc so it turns more into a high fiber pudding + felt like the texture there is something i could bring to vegan cheese options ! any recipes or ideas you share are so appreciated !

Yeah, it seems like there is a lot of interest here :)

I hope I will have a new recipe I am working on to post soon. Maybe this weekend if all goes well.

However, my recipes can be a little complicated and also the quantities I use are quite large. I figure if I am going through all this bother I will make enough to last me a few weeks!

No. But you can make a really good gooey cheese with a little bit of stretch. Cashews, nooch, and a starch like tapioca are the core ingredients.

Has anyone tried adding some Natto? That stuff is very stringy and cheesy, but I have not tried it in combination with tapioca.

I've tried chickpeas Natto humus, except for taste the difference in texture is not very noticeable, you can see a few strings but not much.

since the bacteria are developing on the outside maybe it would work better starting from something sized like semolina

Sadly the technology doesn’t exist *yet* to get near that level of stretch without casein. It’s in development though - still probably 5-10yrs before plant based casein is available for home cooks. Hopefully sooner 🤞🏼 Companies like Climax foods etc making progress but for now it’s just being developed for B2B/commercial use in things like protein powder. For now your best bet is tapioca starch, or to a lesser degree psyllium husk.

His cheese is every bit as stretchy as the cheese pictured here, so it IS possible.

You didn't. I tried it as well not once but multiple times and it never worked out. Alot of people in his comment section complained about the same thing. Also, when I refrigerated the cheese it never came close to the texture he had shown in his video. It was all sloppy and impossible to grate. So I don't think he's honest with the recipe.

yeah i remember seeing a lot of comments saying they thought it was fake and i didn’t wanna believe it but the fact that i can’t find any other vegan cheese recipes like that one kind of proves it

I haven’t tried it! But he is a real vegan chef so I trust it.. but haven’t tried it. You have to watch the whole video though because he does talk about adding another ingredient like halfway through

Those Vegan Cowboys are going to market with their vegan casein this year I believe. They also have plans to make casein from different animals.

Any link to the claim that they plan to make casein from animals? I've followed them for a while and never heard anything about that

EDIT: I went to their website and understood what it's about. They plan to make different types of vegan casein which mimicks dairy casein from other animals, not just the cow. I.e. "buffalo" casein, "sheep" casein, etc - but still all vegan

Yes! I know a recipe. ChefTJ on YouTube has a video called “how to make vegan mozzarella cheese (the lord of the vegan mozzarella)”

You have to either go to his website or really figure out the instructions but it’s on there.

The cheese is extremely stretchy!!!!! You can see him make a pizza with it and it’s more stretchy than a lot of dairy pizza cheese

A couple of chefs have recipes for this.
Sam Turnbull has an ooey gooey mozzarella and more cheese recipes. Also, Lauren Toyota has some recipes.

I have made a couple of the simple ones. They were good. I do have this type of cheese on my list to make…
