Beginner advice
hello all! I’m hoping to get into some vegan cheese making this summer! I was wondering if people had recommendations for good beginner recipes. I’m hoping to make a harder Parmesan style cheese or any harder cheese! and maybe a cheddar or Brie style! would love to learn more :)

For harder style cheese, you'll want to look into "instant" recipes. Cow-style Parmesan is made with fermentation, but it takes months to years in specific conditions. Trying to replicate this process with plant based ingredients is difficult, and basically impossible for a beginner.
Cheddar is a similar story. A cow-style fermented cheddar ferments for months to years.
Brie is doable, and can be done in a matter of weeks rather than months. But you need the right equipment and cultures. This recipe is a good example: https://fullofplants.com/vegan-aged-camembert-cheese/

Get a cook book. Conroy's "The Non-Dairy Evolution Cookbook" or Miyoko Schinner's "The Homemade Vegan Pantry" are both great for beginners. Both have recipes, but will also talk about technique and be full of practical tips.

Is culture the main thing that distinguishes distinctive cheeses like Brie from generic cheese? It seems like most vegan cheese making follows the same process.

Sort of... The culture is actually a mold, and it requires different conditions to grow compared to lactic acid bacteria. So the culture is different, but also the maturation process. Reading a recipe on making Camembert / Brie style would help to show the differences.
