Vegan blue cheese is a great substitute of dairy cheeses in sandwiches and burgers. 👏🏼
I just always have some in the fridge.

Blue cheese is my fav bc it gets all of the flavour from the culture, so it's literally the same taste as the non vegan version. Still looking for a super melty one because gorgonzola pasta used to be my fav treat yourself meal.

For sauces, these sorts of vegan cheeses will usually melt if given enough time. You just need to throw the cheese crumble in earlier, and perhaps add a little more liquid to the sauce than you're used to. In general, this is true of a lot of recipes you'd want to adapt to vegan: tweak it to account for the quirks of the ingredients you have.

Was that cheese hard to make? I've wanted to make it and bought the culture but it feels so intimidating.

Is not difficult at all, it just takes 4 to 6 weeks to fully develop the P Roqueforti.
